If you find yourself waiting for a table at P.F. Chang's China Bistro, do yourself a favor and head into the bar for a drink before dinner. P.F. Chang's has a nice wine list featuring glasses from emerging wine regions. There's a good beer program, sake and a variety of specialty drinks too.
Many of the signature cocktails are modern twists on classics. Be sure to try a Chinese 88, P.F. Chang's version of the French 75, a cocktail made popular in the 1930s. Their version is made with dry gin, lemon juice and sparkling wine -- making it citrusy, crisp and refreshing (perfect for a hot day in Vegas).
