Yellowtail features the finest Japanese-inspired menu, including fresh sushi like toro sashimi with caviar and microgreens, Jidori chicken, prepared with sweet garlic and potato puree, baby root vegetables and teriyaki. Another exotic dish is grilled Walu, Hawaiian butterfish with shiitake mushrooms, pearl onions and tosa sauce, a bonito-flavored vinegar and soy sauce mixture.
Chef Akira Back features delights like big eye tuna pizza and Maine lobster carpaccio, made with sweet onions and cilantro.
Yellowtail seats 180 guests in the dining room, 30 in the lounge area and 30 in a private dining area. The restaurant incorporates the sleek look of elegant wood and stone decor, bronze sculptures and an outdoor patio overlooking the Las Vegas Strip and Bellagio's fountain show.
Yellowtail also has a hand-selected sake collection from across Japan. The wine bar, which seats 18, has illuminated rice paper and colorful photos of Japanese flowers.
