Diablo's Cantina Review:
The ever-inventive and tasteful folks at Light Group have branched out into the Mexican restaurant realm. With Diablo's Cantina at the Monte Carlo, Light Group says"olé!" to Las Vegas nightlife. Diablo's Cantina mixes rustic Mexican style with modern technology -- glazed tiles and furniture exist side by side with flat screen televisions for sports and entertainment viewing. The menu includes south-of-the-border favorites such as Diablo's beef chili nachos, a spicy grilled shrimp quesadilla plus some traditional American classics that have been tweaked with a definite piquant touch, including Diablo Death wings and the Diablo's 15-ounce burger. The menu includes an array of appetizers, salads, taco and burrito combinations, sandwiches and entrees. Libations flow liberally at Diablo's Cantina, with a range of specialty margaritas, mojitos, sangrias and a variety of rare and exotic tequilas sharing the shelf. The house specialty, the Mangorita -- a mix of Cabo Wabo Blanco, mango nectar and fresh lime -- is a sweet and refreshing take on the original margarita. -- Staff Review
