Fin is part of the restaurant renaissance at the Mirage, which began with Cravings, the Adam Tihany-designed buffet, continued with Carnegie Deli, and now has taken flight in the form of Stack, the Light Group's sophisto steak joint, a revamped Kokomo's, and Fin, the jewel in the Mirage restaurant crown.
Fin features a design by Yabu Pushelberg, the firm that did Shibuya and Fiamma at the MGM Grand. The room features murals with Chinese themes, hand-painted on rice paper backdrops, a number of special lighting effects, crystal balls suspended from the ceiling, and on the tables, Spiegelau stemware and Bernardaud plates. It may be the most elegant Chinese restaurant in the entire country.
Lee has a team of terrific chefs in the kitchen, headed by the veteran Chi Choy. His extensive bilingual menu soars on the wings of delicacies and more familiar favorites. The Cantonese American classic shrimp on fried toast is amazing, deeply flavored with the tang of the sea. Cantonese-style barbecued duck, available by the half order, is redolent of star anise and cinnamon.
Live fish and shellfish are prepared in a variety of traditional and innovative ways rarely seen in this country. An order of braised whole Japanese abalone, a chewy, oddly textured masterpiece, will set a Chinese gourmet back a cool $295.
Fin's main dining room seats up to 76 guests. Two uniquely-decorated private dining rooms can hold up to eight guests each.
