Since taking over for the restaurant's original chef, Jacques Van Staden (now at Alizé), Bridget Lieb, a graduate of the Culinary Institute of America and an innovator in her own right, has completely revamped the menu, adding dishes such as a lunchtime honey-glazed salmon salad, duck with pear tarte tatin and John Dory with braised oxtail soup.
