Circo Review:
Circo may be the best and most elegant Italian restaurant in our city. Service rarely misses a beat, views of the Bellagio water show are spectacular, and the cuisine is simply superb. The restaurant is reminiscent of a European carnival tent with Adam Tihany's playful, sophisticated big top décor. Circo specializes in Tuscan cuisine, homemade pastas, grilled meats and fish, as well as hot and cold appetizers. Start with seasonal oysters, Russian caviar or a grilled Mediterranean octopus salad. Pizzas include a smoked Scottish salmon with mascarpone cheese, onion, chives and American caviar. Try the pansotti pasta, made with braised duck filled pasta, chanterelle mushrooms, butter and Parmigiano sauce and an orange emulsion. Seafood options include a Tuscan fisherman's stew, grilled branzino and roasted Maine diver scallops. Meats, including Colorado rack of lamb, veal chops, braised wild boar stew and roasted Napa rabbit loin, round out the menu.
