From celebrity chef Charlie Palmer, Aureole is a grand restaurant inside Mandalay Bay.
The small patio bar that opens into the casino offers small plates and wine. Or if you're looking for a full meal, wind around the four-story wine tower, down the staircase and into the main dining room of the restaurant. There, dine on modern American cuisine like seared foie gras, caviar, grilled swordfish, red snapper and perfectly cooked steaks.
Palmer also features a "parallel" menu, done for the whole table. This menu lets you try one flavor, served two totally different ways. There is also a fresh market menu that uses seasonal ingredients in all the courses of the meal.
In addition to the bar area and the main dining room, Aureole also has the Swan Room, a large private dining room with floor-to-ceiling glass windows overlooking the Mandalay pool. Aureole can accommodate various party sizes. There is also a bar and lounge area with comfortable couches and bar-height tables.
